
Lemongrass Beef Pineapple Summer Rolls
Lemongrass Beef

1 lb grass-fed beef flap steak (flank or skirt work too), thinly sliced

Splash of fish sauce

Sea salt & black pepper
For every pound of beef, use about 1/2 cup total of:

Minced lemongrass

Minced shallots
-
Minced onion
-
Minced garlic
-
Minced Thai chili (to taste)
Heat a little oil, tallow, or ghee in a cast-iron pan. Add the herb mixture and cook 2–3 minutes until fragrant. Add beef and cook until almost done, then turn off the heat. The residual heat will finish cooking the meat.

Roll it all up!
Rice Paper Tip
Dip rice paper very quickly on both sides, then shake off excess water. Don't let it soak. If you're a slow roller, use room-temperature water. Avoid hot water.
Easy Peanut Sauce

1½ cups peanut butter

2 tbsp tamari

Juice of 1 lime

2 tbsp rice vinegar

Chili or sriracha to taste

1/3 cup coconut milk

Pinch of sea salt

Water as needed
Whisk everything together, adding water a little at a time until you reach your desired consistency.
