Day 1: January 1, 2023: SMART STEAMED EGG
Ingredients:
1 oz Lion's Mane (Mindful Mushrooms, San Diego County)
1 tbsp Thai chili sauce (make sure its clean and no preservatives)
1/2 tbsp 100% avocado oil
1/2 tsp Red Boat fish sauce
2 pasture raised local eggs (Black Mountain Ranch)
1/2 cup (100 grams) pasture raised chicken bone broth (Three Sons Ranch)
salt & pepper
garnishes and accompaniments: fermented kimchi, steamed rice
Instructions:
1- Shred lion's mane into pieces and place into a stainless steel small bowl*
2- Mix well with Thai chili, avocado oil, 1/2 tsp fish sauce, salt and pepper.
3- Roast in oven at 325F for 10-12 minutes or lightly crispy
4- In a small ceramic bowl, beat 2 eggs and add salt, pepper, and 1/2 tsp fish sauce
5- Add 1/2 cup bone broth and mix again
6- Steam for 30 minutes or microwave for 3 minutes**
7- Top with kimchi and consumer right out of the bowl or with some steamed Jasmine rice
*Most lion's mane is grown indoors so we recommend letting in sit directly in the sun for at least 30 minutes for it to absorb Vitamin D
**For health reasons, we highly recommend recommend buying a steamer that is around $30-$50 as it's one of the healthiest ways to cook food. Save the microwave for emergency use only, not daily use.

Day 2: January 2, 2023: THIS IS NOT COFFEE
Ingredients:
20 grams chicory root - organic
5 grams dandelion root - organic
8 grams cacao nibs - organic
1 tsp lion's mane pure ground powder (Mindful Mushrooms)
local raw honey or raw organic sugar to sweeten
optional: organic whole heavy cream*
*please please read ingredients in alternative "mylks" like almond, cashew, oat, etc... MOST are not good for you unless you make it homemade yourself. Always check that whatever alternative you are using, make sure it's not worse. This is the classic example of how "sourceism" matters. Cream and dairy products in the nation are heavily ultra processed making us become allergic and ill now. Look for local dairy farmers who don't pasteurize milk and cream products. The taste is incredibly different and you'll be able to benefit from the real nutrients from raw dairy.
Instructions:
1- Steep chicory, dandelion and cacao nibs in 16oz hot filtered water for at least 4 minutes
2- Strain and whisk in lions mane powder and sweetener of choice
3- Optional: 2 tbsp of heavy cream*
4- Whisk till frothy and enjoy!

However, the bitter and earthy flavors that come from dandelion root is something that we recommend you get your taste buds comfortable to so that can connect that flavor to healing your gut, mind, and overall wellness. Mental health is just as important as physical health, and it impacts how we think and react.

Day 3: January 3, 2023: HOMEMADE MAYONNAISE
Ingredients:
3 whole pasture-raised local eggs
1 tsp pinch of pink or real cracked mineral sea salt
1qt 100% pure avocado oil
2 tsp real mustard (no artificial preservatives)
fresh squeeze lemon juice ~about 1 tbsp
2 tsp 100% pure ground lions mane
Instructions:
1- Using a blender or mixer, mix eggs until well blended
2- Add salt
3- While the mixer is going, slowly drizzle in avocado oil so it properly emulsifies with the egg mixture
4- Add in mustard, lemon juice and lions mane
5- Store in tight glass jar in refrigerator

+ Eggs are one of the "fakest" ingredients out there. Because most are from ranches in packed hen houses, these eggs are stripped of its nutrients. Spend the extra money, because you're buying more nutrients and supporting chickens that are pasture-raised eating bugs and grasses that are good for our environment
+ Seed oils like canola, corn, and vegetable oil just to name a few are very backed by government subsidies which makes these oils very cheap. As the saying goes you get what you pay for. I can go on and on about seed oils and I will soon write an article about them as there is so much to share about its history and why it's in practically every single product in the typical American grocery store and used in most restaurants. Consuming food can only do two things: it's either hurting or healing... there is no in between.
+ By switching from store bought mayonnaise to homemade mayo will have an incredible positive impact on your health. Because mayonnaise is very versatile and used in many recipes from dressings, sauces, binders, salads, and as a stand-alone product, It's small changes like these that will have a huge impact on your and your loved ones health.

Day 4: January 4, 2023: ASTRAGALUS HIBISCUS HERBAL TEA
Ingredients:
1 quart filtered water
10 grams astragalus root
15 grams hibiscus dried flower
10 grams fresh sliced ginger
Instructions:
1- In a pot gather all the ingredients and allow to boil
2- Immediately lower heat to low simmer for at least 45 minutes
3- Strain and enjoy
Food As Medicine Benefits:
+ Astragalus is an adaptogenic herb and the ultimate immunity builder and used in Traditional Chinese Medicine (TCM) for millennia. It can prevent colds, illnesses, and balance hormones
+ Hibiscus is a "red" food and red foods in TCM are good for supporting blood health. Hibiscus tea is known to have analgesic properties that relax the muscles of the bladder and uterus thereby reducing cramps.
+ Ginger aids digestion and helps prevent nausea
Additional Notes:
+ You can drink at room temp but best warm. Avoid cold drinks if feeling ill.

Day 5: January 5, 2023: TOUM - RAW GARLIC SAUCE
Ingredients:
1.5 cup garlic - peeled and thoroughly cleaned including ends
2 tsp Himalayan pink salt
1/4 cup fresh lemon juice
1/4 cup ice cold filtered water - must use ICE cold filtered water
3 cup avocado oil (100% pure)
Instructions:
PLEASE READ INSTRUCTIONS as this recipe INVOLVES TECHNIQUE
If you are worried you may break the mix (the oil separates and won't properly emulsify), put the food processor container with blade, garlic, lemon juice, and oil in fridge for at least hour. We have seen this mix break if it gets too warm.
1- Make sure garlic cloves are cleaned, including cutting off the ends
2- In food processor, place garlic and salt and pulse and occasionally remove lid to scrap down sides with rubber spatula until finely minced
3- Add 2 tablespoon lemon juice and pulse until paste forms
4- Add another 2 tablespoon lemon juice and process until smooth
5- The following steps of alternating oil, lemon juice, oil, water, repeat must be done smoothly, efficiently, and quickly as leaving the mixer running will heat the mix too much and cause sauce to break
6 - With mixer running, drizzle 1 cup oil in thin stream, followed by 2 tablespoon lemon juice
7- Repeat with another 1 cup oil and 2 tablespoon ice cold water
8- Continue process by alternating with lemon juice and cold water
9- Keep mixing until oil, lemon juice, and water are all gone

+ Raw garlic contains more allicin than cooked garlic. Allicin is an enzyme that boasts anti-inflammatory, antioxidative and antibacterial properties. There are many studies that show garlic may help prevent certain cancers and may help lower blood sugar, cholesterol, and blood pressure.
+ Avocado Oil is one of the few non-seed oils that is made from actual avocados. It's packed with healthy monounsaturated fat, that is essential for optimal health.
Additional Notes:
+ Please please minimize consumption of seed oils like canola and corn oil. It's used in EVERYTHING and I like I've mentioned in posts above, I will write an article on the harmful studies of seed oils and how it's processed and especially why it dominates the ingredient list in most American foods and restaurants. The WHY is very important.
+ If you sauce does break, here's one way to fix it. Empty the broken mix in a container. In the mixer, add 2 whole eggs and mix. While mixer is running, slowly add in the broken mix. It's similar to the mayo recipe I posted for Day 3.

Day 6: January 6, 2023: AYURVEDIC MOOK MILK
Ingredients:
1.5 tsp pure ground ashwaganda root
1 tsp ground cardamom
1 tsp ground ginger
1/4 tsp pink or pure mineral salt
raw honey - local if possible
12 oz raw organic whole milk
Instructions:
1- Mix all ingredients together until well blended
2- Warm up and do NOT exceed over 105F or it will kill nutrients in raw honey and raw milk

Day 7: January 7, 2023: SPIRULINA POPCORN
Ingredients:
organic popcorn kernels
spirulina - VITAL to source quality spirulina
nutritional yeast
pure mineral salt
100% pure avocado oil
Instructions:
1- Pop your popcorn kernals - we had an air popper
2- Mix all ingredients in a plastic bag and shake.

Day 8: January 8, 2023: REISHI KOMBU CONGEE
Ingredients:
1 cup medium short grain white rice
9 cups water
2 tsp miso
10 grams reishi
HERBAL SACHET:
20 grams ginger fresh sliced
20 grams mushroom stems - optional)
20 grams roasted rice
10 grams kombu
10 grams burdock root
sachet of green tea (optional)
Instructions:
1- Wash rice till water runs clear
2- Make herbal sachet with cheesecloth
3- In a pot, add cleaned rice, water, and miso and whisk till blended
4- Add in reishi and herbal sachet and bring to boil
5- Lower heat to medium
6- Every 8-10 minutes, check on congee and give a stir to prevent from sticking from bottom of pan
7- Around 45 minutes, remove the sachet and reishi and give a nice stir or whisk. If it's too thick feel free to add water but make sure to bring to boil
8- Cook till desire consistency
9- Add toppings as desired. In photo, I added tamari, kimchi, soft boil egg, shiitake, green onion, fried garlic, fried shallots, white pepper, salt, fresh ginger

+ Reishi is known as the mushroom of immortality and widely used for longevity and building immunity in Traditional Chinese Medicine for millennia
+ Kombu is high in iodine which is essential for thyroid function. Kombu is great source of iron, calcium, and trace minerals.
Additional Notes:
+ Congee will thicken as it sits and cools down. Feel free to add water. The longer you cook it, the more mushier it will become
+ Whisking congee makes for creamier texture

Day 9: January 9, 2023: CASSAVA CAKE
Ingredients:
1 can coconut cream (we like Savoy brand) 14oz
1 can sweetened condensed milk (coconut or regular)
2 tsp vanilla
1/4 cup tapioca starch
1 tbsp baking powder (use pure sodium bicarbonate, no aluminum!)
2 lbs ground cassava root
Instructions:
1- Heat oven to 325F convection or 350F regular oven
2- In a large mixing bowl, add coconut cream, milk, vanilla, tapioca starch and baking powder
3- Whisk well but do not over mix
4- Fold in cassava gently. Do not over mix.
5- In a baking pan, grease with coconut oil (we used 10"x12" pan)
6- Gently pour mixture in pan and bake for 20-25 minutes
7- Flip baking pan and bake for additional 5-10 minutes
8- If you don't have convection oven, you'll need to broil for 5 minutes until top is golden brown
9- Allow to cool for 20 minutes and enjoy fresh and warm! This cake does not heat up well so best eaten fresh.

+ Do your research on how to prepare from fresh raw cassava root as it contains cyanide and if eaten raw, you can die!!!
+ Cassava must be eaten COOKED!
+ You can purchase already pre-ground or whole peeled pieces of cassava in the frozen section in Asian market. I'm biased and prefer the ones made in Vietnam as the cassava root is much more yellow in color and tastier.

Day 10: January 10, 2023: LEVEL UP CHILI
Ingredients:
1 diced sweet onion
6 cloves garlic minced
2 bay leaves
1.5 lbs grassfed organic ground beef
2tsp celery salt
1 tsp ground coriander
1/2 tsp ground cinnamon
1 tbsp smoked paprika
4.375oz tin wild caught sardines (certified sustainable)
15oz can beans of your choice - please rinse beans in water!
16oz grassfed bone broth
24oz can diced tomatoes
8oz slice roasted red bell peppers
salt and pepper
optional: add spice like chili flakes, cayenee, arbol chili, guajillo, etc
Instructions:
1- Add some extra virgin olive oil or avocado oil in large pot and cook onions and garlic til lightly browned
2- Add beef and all spices and chop up beef until well grounded
3- Add sardines and mix
4- Add beans and roasted red peppers and mix
5- Add bone broth and tomatoes and mix
6- lower heat and let sit for at least 30 minutes... usually flavors will incorporate more after an hour... add salt and pepper to your liking
7- serve with your favorite toppings like cheese, green onion, cilantro, avocado, sour cream, ricotta, cottage cheese, etc

+ Sardines is one of the most nutrient dense foods in the world and provides us vitamins and minerals that most Americans are deficient in like selenium, B vitamins, omega-3 fatty acids, and magnesium. Sardines are great source of protein and one of the lowest mercury fish.
Additional Notes:
+ Make sure you buy wild sardines that have the certified sustainable label
+ I cook for those for illness, so I keep this chili recipe mild. However, feel free to experiment with spices like arbol chilik cayenne, chili flakes, guajillo, etc to give your chili an extra kick
+ Don't forget you can enjoy chili in burrito wrap, over baked potatoes, over rice, or add an egg on it!

Day 11: January 11, 2023: LADY HERBAL TEA
Ingredients:
dong quai (lady ginseng)
goji berries
jujube - Chinese red dates
Instructions:
1- Heat up herbs for at least 45 minutes on low after boiling
2- May eat the jujubes and goji berries

Day 12: January 12, 2023: GREEN WARRIOR
Ingredients:
1/2 cup coconut cream
1 pitted soaked date
1/8 cup peanut butter (pure)
1 tsp spirulina (sustainable quality source only!)
1tbsp collagen protein powder
1 cup - handful of fresh spinach (do not sub with other greens unless you want your drink brown color)
1 cup hot water

1- Put all ingredients in blender and blend until well mixed

Day 13: January 13, 2023: GINGER TURMERIC BONE BROTH - GTBB
Ingredients:
roasted chicken bones
chicken feet
lots of fresh sliced ginger and turmeric
black peppercorns
apple cider vinegar
filtered water
Instructions:
1- Put all ingredients in pot and allow to boil and then simmer for 24 hours
2- Using InstantPot, cook for two sessions of 4 hours for total 8 hours

Day 14: January 14, 2023: TONKOTSU (PORK BONE) BROTH
Ingredients:
pig feet (from sustainable source like Peads & Barnetts)
leeks
salt
filtered water
Instructions:
1- Put all ingredients in pot except salt and allow to boil and then put on low heat
2- Cook for at least 12 hours
3- In InstantPot, cook for 4 hours
4- Strain and then salt to taste
5- Place in fridge overnight
6- Remove the top fat layer. This is lard.

Day 15: January 15, 2023: CHASHU PORK BELLY
Ingredients:
pork belly (no skin) - sustainable berkshire if possible
1 cup tamari
1 cup mirin
1 cup sake
2 diced shallots
slice fresh ginger
Sea salt
Pepper
Instructions:
1- Rub salt and pepper on both sides of pork belly
2- Mix tamari, mirin, and sake and rub all over pork belly
3- Add shallots on inside of pork belly and roll
4- Can roll this with rope as is or add banana leaf around - just make sure its super tight
5- In instant pot, add rolled up belly with rest of sauce and ginger
6- Cook for 20 minutes on high pressure and flip
7- Cook for additional 20 minutes on high pressure
8- Remove and add 1/2 cup sauce in tightly sealed bag and refrigerate overnight
9- Slice thinly and consume as is or torch for further smokiness and crispiness

+ Pork is the #1 meat consumed in the world (even in Mediterranean areas where for some reason is omitted in so-called Mediterranean diet

+ Raising pig is actually very sustainable as you can feed a large family (as opposed to chickens being too small and cows way too large) and there are so many things that can be made pig like lard, sausage, broth, bacon, and charcuterie cured meats

Day 16: January 16, 2023: RAMEN EGGS NOT JUST FOR RAMEN
Ingredients:
fresh local eggs from pasture-raised happy hens
1 part tamari
1 part mirin
1 part sake
vinegar
Instructions:
1- Fill pot with water and and 2 tbspn of vinegar and allow to boil
2- Gently lower eggs and if eggs are direct from refrigerator, cook for 7 minutes. If eggs are room temp, cook for 6minutes and 30 seconds
3- Immediately strain and place in ice batch. Peel
4- In a plastic bag add the leftover sauce you had from yesterday's recipe for chashu or make again with equal parts tamari, mirin, and sake
5- Tie bag to make sure eggs are completely submerged in liquid
6- Refrigerate overnight and eat within 2 days as it will get salty... or remove from the sauce to stop marinating. This process also slightly "cures" the egg yolk so it will have slight gummy delicious texture.

Day 17: January 17, 2023: PLANTAIN TORTILLAS
Ingredients:
green plantains (3 plantains made ~12 tortillas)
sea or pink salt (do not use overly processed iodized salt - not healthy)
tapioca starch
Instructions:
1- Clean plantains and cut lengthwise and then cross cut into pieces
2- Cook in pot of boiling water for 15-20 minutes (depends how green your plantains are... more riper ones will cook less)
3- Strain and let cool
4- Peel and place in food processor with some salt until dough forms
5- In a bowl, lightly coat with tapioca starch
6- Lightly coat your hands with tapioca starch (do not use rubber gloves cause it will stick) and make 50grams balls
7- Roll out each tortilla using a pin roller or use a tortilla press. If using press, cut a plastic bag into two pieces and place dough in between to prevent sticking
8- In a pan lightly oil with avocado or coconut oil and cook until lightly browned on each sides
9- These plantain tortillas are super pliable and last 5 days in fridge and 6 months in freezer if tightly sealed. If your tortillas are not cooked thoroughly when storing, it may stick to each when stacked so place piece or parchment of wax paper in between just in case
